Eggs & Veggie Scramble
1 dozen eggs
3 small zuchini - chopped
1 med onion - chopped
1 red bell pepper - chopped
1 orange bell pepper - chopped
5-6 baby bella mushrooms - chopped
2 cloves garlic - finely diced
The amounts here are for meal prep - make ahead for an easy on the go breakfast option.
Add vegetables to skillet and saute until almost done. Move the veggies to the side of the skillet and add the eggs. Scramble until cooked through and then mix the eggs and veggies all together. Portion into to-go containers for an easy breakfast option. Add toppings
